Recipes to celebrate the end of the year

The end of the year has arrived with a festive atmosphere, and  Academia da Carne Friboi  is celebrating too! The platform presents a Christmas special with three perfect recipes for dinner. The first recipe is a Breaded Fillet Steak Skewers, a versatile option that can be served as an appetizer before the big dinner or a practical, quick-to-prepare snack that everyone will love. And the recipe is steeped in history. Chef Fábio Vieira learned the dish from his grandfather. It's a tradition with the special touch of home cooking that celebrations deserve.

Breaded fillet cap skewer
Serves: 9 appetizer-style skewers
Preparation time: 40 minutes
Difficulty level: Beginner

Ingredients
9 cubes (try to make cubes of the same size) of red bell pepper
9 cubes of yellow pepper
9 tomato cubes
9 red onion cubes
2 crushed garlic cloves
3 tablespoons red wine vinegar
salt and black pepper to taste
½ chopped onion
sunflower oil

To bread
2 cups Panko breadcrumbs (or breadcrumbs)
300 ml of meat broth
½ cup of wheat flour

Preparation mode
In a hot pan (you can use a pressure cooker, being careful not to overcook it), brown the meat well, seasoning it with salt, pepper, vinegar, and garlic. Add the onion, enough water to cook it, cover the pan, and cook until tender.
Remove the meat from the broth and let it cool. On a small skewer, place a cube of meat alternating with the diced peppers, tomatoes, and onions.

To bread
Add two ladles of the broth prepared in the previous recipe, but without the starch. Season with salt and add a ladle of wheat flour.


Dip the skewers in the batter and sprinkle with panko (or breadcrumbs). Deep-fry in oil at 170 degrees Celsius. Serve immediately.
